Green coffee SCA certification in Italy
At the end of our coffee route we always give to our participants the possibility to book SCA (former SCAE) certifications of Roasting, Barista, Brewing and Sensory Foundation (do you want to know what is it SCA/SCAE Specialty Coffee Association? Check our page here).
During our five days coffee route course we do not certify the Green coffee area, that is more specialised and really interesting just for people who want to know coffee in a very deep and professional way.
In the course, linked with the SCA certification we will lead the participants in a highly professional manner to discover all the key concepts surrounding the green coffee: plant growth , harvesting, processing drupes, transportation, storage until the arrival of in roasting coffee. It will be a busy day that will alternate the theoretical part practical tests for classification of green coffee and tasting in cupping.

Green coffee selection in SCA course
A course about green coffee, ideal to explore the most of all aspects related to the processing of more distant to us coffee, the ones that take place before the arrival of beans in our roasters. From the plant to the plantation, the processing stations of the green coffee up to the selection and delivery of the bags.
In Florence in our school Espresso Academy we will organize a two-day course, taught by AST SCAE Marco Cremonese, who will lead the participants in a professional training course on green coffee. It is a course dedicated to Barista Coffee Roasters and professionals who wish to gain a deeper understanding of the world of green coffee. They will be two very intense days.

With Marco, the cosmopolitan group of the five days coffee course route…
7th of February. A new row of courses have impacted our school for the five days coffee course route from the 6th to the 11th of Febrauary, with the last day dedicated to SCA (SCAE+ SCAA) certifications of Roasting and Blending held by our Authorized Trainer Marco Cremonese.
Also to this course, as usual, a lot of guys from all over the world, including four”I’ll be coffee shop owner…” Olivera from Croatia, Stephanie from Costa Rica, Hyerim From Korea and Joseph and Youssef, from Beirut!
And in spring great news are arriving: the Green coffee course and the Espresso machine technician course, in collaboration with Elektra!

29th of November. We are not writing nothing in this diary since a too long time, but for a good reason! We have been involved in a new fantastic adventure, the trips into the very roots of the coffee origin, the journeys at the discover of the coffee countries and the coffee plantations. We have been in Vietnam, leading our group, from the 18th to the 28th of November, and we will be in Honduras from the 19th to the 31 of January!
But it is a back and forth, because if we are travelling to the coffee, the coffee is travelling to us. For the first time, in the five days coffee and barista complete course that we are having in this days, we have a cool couple of guys from Sri Lanka; they are opening a “third wave” coffee shop in their country, where the coffee culture so far has not been very developed, but is growing! Yes!!

Yes, in the coffee plantation there is to work a lot!

SIBOS, the coffee exhibition in Geneve
26th of September. Our school still go deeper and deeper into the coffee world. Thanks to the Authorized SCAE Trainer Marco Cremonese, the guy who roasts our coffee specialities, we will hold the first Green Coffee course and certification October the 10th, 2016… and we are writing these notes from Geneva, where we are taking part to the Sibos exhib, a real dive in coffee expertise!

Today, the new five days course “coffee route” bring us new friends and new stories!
We have the two sisters Murooj and Sawsan, that in Bahrain own and run coffeeshops and kiosks into the campus of the local university.
We have Hanseok (Andy) from Korea, that is fascinated by the coffee and is getting SCAE certificates...
We have Alex, a Bulgarian who is living in United States, so in love for coffee to create a barista “trench” at home that is much better of the one of many real coffee shops!
And again and again, more people, more stories but the same passion: coffee!
